One-Pan Garlic Butter Chicken and Vegetables Recipe

Ingredients:
For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 4 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
For the Vegetables:
- 2 cups broccoli florets
- 1 cup baby carrots, halved
- 1 cup bell peppers, sliced (any color)
- 1 cup zucchini or yellow squash, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon dried thyme
- Salt and black pepper, to taste
Optional Garnish:
- Fresh parsley, chopped
- Lemon wedges
Instructions:
- Prepare the Chicken:
- Season the chicken breasts with paprika, Italian seasoning, salt, and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the chicken and cook for 4-5 minutes on each side until golden brown and nearly cooked through. Remove and set aside.
- Cook the Vegetables:
- In the same skillet, melt 1 tablespoon of butter. Add the minced garlic and sauté for 1 minute until fragrant.
- Toss the broccoli, carrots, bell peppers, and zucchini with olive oil, garlic powder, thyme, salt, and pepper. Add the vegetables to the skillet and stir. Cook for 5-7 minutes, stirring occasionally, until they begin to soften.
- Combine and Finish:
- Push the vegetables to the side of the skillet and return the chicken to the center.
- Add the remaining butter to the pan and allow it to melt, coating everything in the garlic butter sauce.
- Cover the skillet and cook for another 5-7 minutes until the chicken is fully cooked and vegetables are tender-crisp.
- Garnish and Serve:
- Sprinkle with fresh parsley and serve with lemon wedges for a zesty finish.
