One-Pan Garlic Butter Chicken and Vegetables Recipe

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 4 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

For the Vegetables:

  • 2 cups broccoli florets
  • 1 cup baby carrots, halved
  • 1 cup bell peppers, sliced (any color)
  • 1 cup zucchini or yellow squash, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste

Optional Garnish:

  • Fresh parsley, chopped
  • Lemon wedges

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with paprika, Italian seasoning, salt, and pepper.
    • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
    • Add the chicken and cook for 4-5 minutes on each side until golden brown and nearly cooked through. Remove and set aside.
  2. Cook the Vegetables:
    • In the same skillet, melt 1 tablespoon of butter. Add the minced garlic and sauté for 1 minute until fragrant.
    • Toss the broccoli, carrots, bell peppers, and zucchini with olive oil, garlic powder, thyme, salt, and pepper. Add the vegetables to the skillet and stir. Cook for 5-7 minutes, stirring occasionally, until they begin to soften.
  3. Combine and Finish:
    • Push the vegetables to the side of the skillet and return the chicken to the center.
    • Add the remaining butter to the pan and allow it to melt, coating everything in the garlic butter sauce.
    • Cover the skillet and cook for another 5-7 minutes until the chicken is fully cooked and vegetables are tender-crisp.
  4. Garnish and Serve:
    • Sprinkle with fresh parsley and serve with lemon wedges for a zesty finish.
